Ingredients

For the broth:

  • 1 tbsp extra virgin olive oil
  • 3 shallots, coarsely chopped
  • 1 bunch scallion, thinly sliced and white & green parts divided
  • 4 cloves garlic, minced
  • 1 1/2” piece fresh ginger
  • 6 c chicken broth
  • 2 whole Star Anise, toasted
  • 1/2 tsp Clove, toasted
  • 3 Cardamom Pods
  • 1 cinnamon stick
  • Lemon Grass Stalk
  • 1 tbsp soy sauce (+/- to taste)
  • 1 tbsp fish sauce (+/- to taste)
  • ½ Lime, Juiced (+/- to taste)
  • ½” chunk yellow rock sugar

For serving:

  • 12 oz rice noodle
  • Rotisserie Chicken, shredded and/or Shrimp

For garnish:

  • Fresh Mint
  • Fresh Cilantro
  • Scallion, green parts
  • Red Onion, thinly sliced
  • Fresh lime
  • Bean Sprouts
  • Shaved Cabbage
  • Bok Choy
  • Jalapeño, thinly sliced
  • Spicy Chili Sauce
  • Hoisin Sauce

Directions

In a large pot, saute shallot, scallion, garlic and ginger in olive oil. Add broth, Star Anise, clove, cardamom, cinnamon and lemon grass.

Cover with a lid and simmer for 20 minutes. Taste. Adjust seasoning with soy sauce, fish sauce, lime juice and sugar.

Optional: Strain broth and return to a simmer before serving with protein, noodles and toppings.
